Healthy Recipes with Quinoa

Ok, so we’ve all heard a ton of good things about quinoa in the past few years, but in my own research I found few recipes that truly utilized quinoa as a rice substitute. Most recipes just incorporate it into salads, or require some form of oily dressing that defeats the purpose of cooking with quinoa in the first place. Below are a few of my own favorite recipes for a delicious and healthy quinoa meal, I guarantee you won’t miss the lack of carbs at all!

SALMON AVOCADO QUINOA WITH GREEN CHILLI & LIME SAUCE

 

INGREDIENTS
– 1 salmon fillet
– 1/2 avocado
– 1/2 cup uncooked quinoa
– 1 small green chilli
– 1 lime
– 1/2 tsp brown sugar
– salt to taste

 

PREPARATION
1. I find the best way to cook quinoa is with a rice cooker, with equal portions of quinoa and water.
2. For the sauce, chop the green chilli finely (de-seed if you prefer less spice), squeeze in the juice of 1 lime and mix in the brown sugar till it dissolves
3. Pan fry the salmon fillet on a dry pan (no oil) for about 4 minutes on each side
4. Instead of slicing, use a large spoon to spoon “petals” of avocado out of its skin and lay in a circle around the cooked quinoa
5. Drizzle sauce over the salmon and sprinkle sea salt over the avocado petals and voila

MINCED CHICKEN LAARB WITH QUINOA 

 

INGREDIENTS
– 300g minced chicken
– 1 clove minced garlic
– 1/2 tsp grated ginger
– 2 sprigs of chopped scallion
– 1/2 tbsp light soy sauce
– 1/2 tbsp fish sauce
– 1 tsp brown sugar
– dash of white pepper
– 1/2 cup raw quinoa
– 1/2 cup frozen edamame beans

 

PREPARATION
– Cook the quinoa per usual method
– Pan fry the galic and ginger for 30 seconds, the add the minced chicken along with the seasoning. Pan fry till the chicken is almost done
– Add the edamame beans and pan fry for another 2 minutes
– Sprinkle in the chopped scallions
– Mix in the quinoa for a healthy bowl of Thai inspired laarb. Serve with lettuce leaves
